Makes about 6 large pancakes
- 100g plain flour
- 1 large free range egg
- ½ pint semi-skimmed milk + water (about 300ml - ¾ milk ¼ water)
- Pinch of salt
- Oil for frying
How to make pancakes:
Sieve the flour into a Mixing Bowl, add the salt. Make a well in the flour and add the egg and mix in. Pour in the milk and water and whisk until smooth. Alternatively you can put all the ingredients in a food processor and zap until smooth. Leave the mixture in the fridge for 30 mins before using, if possible. This allows the batter to settle and produces a better pancake.
Put a large frying pan over a medium heat.
Add a dash of light oil and heat until smoking.
Pour the excess oil into a small bowl and use it for the next one.
Using a ladle pour a spoonful of the pancake batter into the hot pan and swirl to get a full covering - cook for about 1 min each side (it's ready when it's easy to flip over).
Tip: Often the first pancake is a bit of a disaster - give to the hungriest/greediest in the room and tell them it all goes down the same way. The next one is almost always a success.
Serve immediately with sugar and lemon (and cream if you like it).
