Homemade elderflower cordial has a much richer flavour than most store-bought varieties and the sweet and aromatic taste is a reminder of early summer that can be enjoyed throughout the year.
Elderflower grows in abundance in all sorts of places at the beginning of summer. It is best picked at late morning on a dry day and the cordial made within a few hours of picking. Just be sure to leave some flowers for elderberry picking later in the year.
Elderflower Cordial Recipe
Makes 2 litres
900g cold water
1100g caster sugar (granulated will work just as well)
500g picked elderflower
50g citric acid
Wash the elderflower and remove as much of the stalk as you can.
Put the sugar and citric acid in a large bowl. Bring the water to the boil, remove from the heat and pour over the sugar, stir until dissolved.
Peel or zest the lemons and limes and add this to the sugar syrup, quarter the flesh and add as well. Allow the syrup to cool, then add the picked and washed elderflower.
Cover the bowl of syrup with greaseproof paper or clingfilm to limit evaporation and leave to infuse for 48 hours in the fridge.
Once the syrup has infused, pass the liquid through a fine sieve or muslin to remove the leftover fruit and flowers. Pour the liquid into sterilised bottles and enjoy throughout the year!
